  • 2 (15-ounce) cans black beans, rinsed and drained
  • 4 tablespoons vegetable oil, divided
  • 2 small shallots, finely chopped (about 1 cup)
  • 3 medium cloves garlic, minced
  • 1/2 oz dehydrated mushrooms (I used shiitake)
  • 3/4 cup roasted cashews
  • 3/4 cup panko bread crumbs
  • Truffle salt (optional)
  • 1 large egg
  • 2 tablespoons mayonnaise
  • Kosher salt and freshly ground black pepper
  • 6 burger buns
