- 2 (15-ounce) cans black beans, rinsed and drained
- 4 tablespoons vegetable oil, divided
- 2 small shallots, finely chopped (about 1 cup)
- 3 medium cloves garlic, minced
- 1/2 oz dehydrated mushrooms (I used shiitake)
- 3/4 cup roasted cashews
- 3/4 cup panko bread crumbs
- Truffle salt (optional)
- 1 large egg
- 2 tablespoons mayonnaise
- Kosher salt and freshly ground black pepper
